Alta Vista Single Garden Thames dry red wine
Deep purple in color, the aroma is reminiscent of fresh fruit and flowers. The palate is rounded, with very sweet tannins, and the oak barrel gives the wine a beautiful taste. It has a long finish. The winery is a vineyard owned for more than 40 years. Light soil, with sand and some silt, makes it highly permeable. Using the traditional irrigation process of snow mountain and snow water. It has the coldest climate of all our producing regions: cool nights, hot days, mild and steady breezes make for a healthy vineyard. The ripening is slow and balanced, and small bunches of compact grapes are the characteristics chosen for this vineyard. Early to mid-April to harvest by hand. The grapes are transported in incubators to ensure that the fruit does not break and is kept at 10°C for 24 hours. Each bunch of grapes is hand-sifted and then peeled into a concrete wine tank. Fermentation is initiated spontaneously by yeast native to the vineyard. The fruit's flavor, color, and tannins are constantly extracted during fermentation. Aged in concrete tanks for 28 days to help separate the body from the dregs. Emulsion fermentation occurs spontaneously in concrete wine tanks. It is then aged in 225 and 600 litre new French oak barrels for 12 months.
